The latest rage in the world of coffee is cold-brewed coffee aka 'chilled black coffee.' People like it because it is easy to make and is a smoother brew than most traditional hot coffees. The end-product – if done correctly – has low acidity and a nice froth. You can use any coffee you'd like as long as you use a coarse grind. If it is too fine, the process will over-extract the acid from the grounds and ruin your finished product.
TWO TYPES OF COLD-BREWED COFFEE
Immersion vs. Cold-Drip: Two basic methods exist to make cold-brewed coffee, and each one requires different equipment.
Immersion style cold coffee, aka “cold brew,” is lighter than coffee made with a cold-drip coffee maker, which is more concentrated due to the drip-brewing process.
The main difference between the two methods is that the immersion method consists of mixing ground coffee with water, which is then placed in a special container and put in the refrigerator to steep for 12-24 hours. Once extracted, water can be added to the finished product to lighten the brew up a bit and dilute the caffeine content if desired.
The other method known as cold-drip is exactly as it sounds. You purchase a cold-drip machine (see below) and load the receptacle with coffee and the top unit with water. The water slowly drips through the coffee grounds and creates a non-bitter and light drink within anywhere from three to 12 hours, depending upon how you set the drip time.
The ratio of coffee grounds to water depends upon how strong you want your coffee. An average starting point is to use 3/4 cup of ground coffee to four cups of cold water. This makes about 32 liquid ounces of coffee. Compared to a hot-drip machine, cold-drip machines draw out less oil and acid from the grind, making for a more floral drink, a higher caffeine content and less bitterness.
